Candy Cane White Chocolate Popcorn
I love peppermint, but I’m not a huge candy person so I tend to find ways to incorporate the flavour into my baking, especially this time of year. There are a lot of candy canes in my house right now. They are so versatile. Hang them on the tree, use one to stir your coffee or hot chocolate, or just go ahead and eat one straight up if that’s your thing. There are a lot of really creative recipes out there for using candy canes in your holiday baking and this may be one of my favorites. It only takes three ingredients and you don’t actually have to bake a thing!
Candy Cane White Chocolate Popcorn
Ingredients
- 8 cups popcorn
- 1/4 cup candy canes finely crushed a coffee grinder works well for this
- 1/4 cup candy caned smashed into small but not super fine pieces
- 5 ounces white chocolate
Instructions
- Use a coffee grinder or whatever sort of grinder or chopper you have around that will grind the candy canes as small as possible until you have a ¼ cup of candy cane "dust".
- Put some more candy canes in a ziploc bag and smash with a hammer or whatever you have handy to break them into about ¼ cup of small pieces. The fine candy canes are more for flavour and the small pieces are just pretty (although still tasty)
- Put your white chocolate in a microwave safe bowl and heat for 30 seconds, stir and put back, heating in small increments until completely melted and smooth.
- Put the popcorn in a large bowl
- Pour the melted chocolate over the popcorn and stir well to coat all of the popcorn.
- Add the finely crushed candy canes and stir well.
- Add the larger pieces of candy cane and stir again.
- Scoop the popcorn onto a cookie sheet that is lined with wax or parchment paper and spread out.
- Allow to cool until the chocolate has set (you can put it in the fridge or freezer to speed that up).
- Once set, break up any large pieces and store in an airtight container under ready to serve.
